Currently it is impossible to host a race that is inter-class. For example, you cannot host a Buffalo S vs a Buffalo STX race because one is in Sports and the latter in Muscle.
I suggest a temporary class (Maybe as a donator feature as this only concerns race hosts), where players can choose what cars to put in said class and those are the vehicles you can choose for that particular race.
While we're at it, the cars put in this class can also be the only cars you will get from a transform checkpoint if the race is a transform race.
Example scenario: I put in 5 cars in the temporary class, Feltzer, Windsor, Furia, Tornado, Chernobog. Next transform checkpoint, these are the only cars I can possibly get, and may RNG be on your side and hope you dont get the Chernobog.
